Bert & Ernie, yogurt cones and Jamaican Jerk Salmon with Cilantro lime rice and citrus salsa

Hello Friends! I am so excited about this week's menu, even though it has nothing to do with the crockpot. We've been super busy this week and honestly I havent done alot of cooking. Mainly because we have been spending about 90% of our time out at the lake and on the boat! I love summer!!

Ok, for today's first snack I made Bert and Ernie. I got the recipe idea from here. Mister loved it! My father in law is a preacher and on more than one occasion has mentioned how I always turn food into animals and people, which probably kind weirds the congregation out and makes them wonder what exactly do I do with my kids all days. But seriously, how could I not make this?Its too cute!

Next Mister had this for snack. I got this idea from a blog too, and he loved it! It was messy for a two year old, but then again what isnt messy with a two year old? Yum!
Now for the main menu. Shut the front door this was good! Heres what you need:

white rice, cilantro, 1 lime, butter, 1 can pineapple, 1 red pepper, 1 orange, 1 jalapeno, olive oil, 3 nice sized salmon filets, Caribean, Jerk Seasoning

First start your rice. I boil 2 cups water, add one cup of rice with 1-2 tblsps butter, cover and simmer.

I made my own seasoning. I got the recipe here. I looked at the store and couldnt find any, but this was super easy to make and I had leftovers. I also had everything on hand so I didnt have to spend extra money. I rubbed the salmon filets on both sides with the seasoning. To cook the salmon Hubcap grilled the salmon on the meat side over direct heat for 5 minutes. Then he took the salmon off direct heat and cooked it skin side down for 15 minutes.

While the salmon cooked I diced up the orange, red pepper and jalapeno and added it in a bowl with the pineapple, some cilantro and some olive oil. (Note: you really should wear gloves when cutting the japlapeno. Uusally I dont and I'm fine, but for some reason this time I burned my fingers so bad and spent the rest of the night with my hands in bowls of sour cream, milk, rubbing alchohol and baking soda. Yes, blonde, very blonde but at least I got out of dishes) Anyways, now you have your salsa.

The rice should be cooked by now. Fluff the rice with a fork and then grate all of the lime (lime zest) into the rice. Next cut the grated lime in half and squeeze the juiice into the rice, about 2 tblsps.. Next, chop up some cilantro, I used about 10-15 sprigs and add to rice. A little salt, a little pepper and your good!

Your salmon should be done, so arrange your plate! We ate ours with sauted zucchini and grilled corn on the cob. It was delicious, and it wasnt too spicy for Mister! It was pretty, and pretty easy which I loved!

Miss Crafty Pants Monday

This week we made octopuses! I was very excited about this, I got the idea from one of my favorite blogs and then just tweaked it to fit Mister's age.
Here's what you need:

one regular sheet of paper, eight strips of colored paper, googly eyes, glue stick, bubble packing sheet and a marker

Cut your regular sheet of paper into an octopus head shape. Thats sounds weird, but I can't think of any other way to word it.

Glue your legs onto the back side of the octopus head/body. As Mister glued, I cut the packing tape into strips and then he glued those on the octopus "arms". These are the suction cups...cute right? Then glue on the googly eyes. You could draw a mouth too!

Here it is!!! Isn't it so cute! I love it!

I hung Mister's from the ceiling in his room. He loves to look at it and talk about it, even though I'm not really sure what he is actually saying!

4 months!

Little Miss is 4 months old today! The time is flying by...

Little Miss at 4 months old you:
*can roll all the way over, even though you are not a huge fan of the whole rolling over process
*still sleep through the night, and when your brother goes down for a nap, mommy has it too easy (knock on wood)
*your sock doll is your favorite toy, even though your brother thinks it's cars and makes you play with him all the time!
*your favorite room in the house is the bathroom! When all else fails, I lay you down on the rug in there and you are a happy camper! I would just put you there first but I feel really weird just leaving you in the bathroom....
*love to be outside
*love your brother so much, and he loves you so much too! He always needs to know exactly where you are, and lately when he wakes up you are the person he asks for!
*can sit up in your bumbo, but are still a little flopsy
*Love mama alot, but are getting better about other people holding you, as long as you can't see me!
Little Miss you get sweeter and cuter by the minute! I love you so much and I am so blessed to be your mama!

Small Style

We've spent alot of time in our swimsuits lately! Whether is playing in the backyard, at the water park or out at the lake! We got to go out on the boat the other day, which was Little Miss' first time! She loved it! Mister got to practice swimming and Hubcap and I got to kneeboard and fish!  It was a great afternoon/evening!

It was an itsy bitsy teenie weenie pink and orange striped bikini, that she wore for the first time today!

Crockpot Wednesday:Smores

We have been eating alot of smores around here! I love them, Mister loves them and Hubcap loves them! I love hanging out on the back porch, roasting marshmallows and watching Mister play. But sometimes it is a pain to have to go light the charcoal. And sometimes it is a pain when there are flies.And mosquitos. So sometimes we move the party inside and have s'more fondue. Yummy!
Here's what you need!

15 oz milk chocolate bar, 1 package of large marshmallows, 1/2 cup of half and half or heavy cream

In a small slow cooker,stir together your chocolate, marshmallows and half and half. Cover and cook on Low for 1 1/2 -2 hrs, stirring once during cooking. Whisk until the mixture is smooth.

Serve immediately or keep warm. If you keep it warm, make sure you stir it occasionally. And make sure you have alot of fun dippers on hand to serve it with. You can use fruit, more marshmallows, graham crackers! Yum! (It's also really good if right before serving, your stir in a half cup of creamy peanut butter) :)

I am slowly teaching Mister the letters of the alphabet. He shows alot of interest in the letters and actually learned some on his own, (ok Sesame Street did all the work for me). So now I'm taking a letter a week, and were going over it every day during snack. So for our snacks were eating foods that start with the letter we are learning! This week the letter is P.

We practice coloring it in with paint, chalk, crayons and then I made a flash card of it as well. He likes learning it because its a game, and its really no work on my part! Heres to the letter P!!

Rock n Roll Baby...

Yep, thats right Little Miss is officially a roller.

Yesterday she rolled over all by herself. And apparently she was very proud.

She is officially a Bumbo sitter too. Sniff.

And in other news we will probably be spending alot of time in here again today. I dont know about you but it feels like a cardboard box sitting kind of day....

Miss Crafty Pants Monday

Happy Monday Friends! Hope that everyone had a fun filled weekend! My best friend from college came and stayed with us, which is always fun. Mister loves his "T" as he calls her. Before she came we snuck in a craft and tonight I snuck in a craft after the babies went to bed! I always have my friend Tiffany and her husband make our birthday invitations and Christmas cards. To thank them, Mister painted them a picture! Heres what we did.

First I just let Mister paint a piece of paper any colors he wanted. He is really into painting, which is great! Whenever I need to "confine" him for awhile to get something cleaned I just put him in his highchair with his watercolors!

While he painted his paper, I painted a background of blue and green. If you have an older child then they could do this, but Mister doesnt really get the concept of ONLY one color so I handled this part. While it was still wet I let him sprinkle blue glitter on it, to make the "water" sparkle.

After his colorful art was done, I drew fish shapes on the back of the paper and then cut them out. Then Mister got to glue the fish to the blue background.  And there you have it, beautiful fish art! It really is fun! We have one in our hallway framed that he made for Hubcap for Father's Day, and it always makes me happy when I pass it.

Tonight I made Mister these cute puppy shoes. I just bought some shoes from WalMart and then hot glued felt and googly eyes. Seriously, googly eyes make the world a little brighter! I can't wait for him to see them in the morning.

Small Style

This week is flying by! I had to go back to work yesterday and the day before to hire new teachers for the charter school and got a fun little glimpse into this next year! It is going to be REALLY hard to leave my babies, even though I get to team teach and will only have to work two days one week and three the next. I'm praying Hubcap gets another raise this year so that next year I can stay home full time. I love teaching and I am excited to be apart of such a great school but my heart is with my lovelies and raising them is so imporant. My dad gave me an article from the paper once by Dr. Dobson, with studies from Harvard that said that the mom is the most influencial person in a childs life for the first 18 months. So it kills me to leave Little Miss at 4 months. But it also reminds me to make the most of the time I have with them and to make every minute count. And I did almost give Mister ice cream for breakfast because he asked.

So I'll do it while I can!

Miss Crafty Pants Monday

We have been up to our ears in crafts this last week! And the craftiness will continue since Mister will be two in less than a month and I've got alot of Hungry Caterpillar party plans in my head. This last week I made these cute Pies in a Jar.

I painted the tops of my lids with chalkboard paint, and they were so cute! I also made this cute bunting for the kids bathroom. It's bright and cheery (just like Mister's masterpiece in the background, dont you think?).

For my craft with Mister this week we made campfires.We have been eating alot of s'mores lately and Hubcap is dreaming of camping so we made these in honor of him. Heres what you need.

An old cd, red,orange,yellow paper or tissue paper, glue, rocks, sticks and dirt. Yes, I know already a hit with any little boy, anywhere.

First we just glued our sticks to the middle of the cd, then added the rocks around the little "woodpile". I cut some small pieces of paper and Mister crumbled them and he glued them to the top.

Then came his favorite part. I put glue all over the rest of the cd and then we got to go outside and he got to sprinkle( of pour) dirt all over it. I tapped it off and voila a cute little campfire.

Our's is decorating our outside little table, since I dont really  want dirt all over the house. Happy campfire fun!

Small Style

Today is going to be busy! I'm making 40 pies in a jar for a wedding shower this weekend, and I still have alot left to do around the house. But first I'm going to link up with Mama Loves Papa for small style.

Here is my most favorite picture of Little Miss. She's wearing her patriotic swimsuit which was a hand me down and her headband is Trew Luv. Jacklyn's headbands are amazing and she is as sweet as she can be! My head is usually adorned by some kind of Trew Luv band!

Mister is wearing his Every Day's a Tonka Day shirt (Target). Sorry you can't really see it, he's a mover and a shaker that one, and getting him to take a picture is a little tricky these days....

Crockpot Wednedsay:Bacon Lettuce and Fried Green Tomato sandwiches

Today's Crockpot Wednesday is minus the crockpot. I know, then its just a normal Wednesday but this recipe is just too good not to share!! This morning the kiddo's and I and their auntie, one of my best friends who was in town from Massachusetts went to a U-Pick Farm. It was so much fun! Mister had a blast picking fruit and veggies and I enjoyed the you pick price and yummy produce. And I really love it when we can do something outside, out of the ordinary and make fun memories! At the farm I got some green tomatoes and so that is why I am sharing this recipe: Bacon,Lettuce and Fried Green Tomato sandwiches with Garlic Basil Mayo. It is delicious, and reminds me of some of my favorite things, Alabama and the movie Fried Green Tomatoes. Here's what you need.

bread,bacon, lettuce, green tomatoes(if you can't find green tomatoes just buy not ripe red tomatoes), milk,flour,salt, pepper, garlic powder,fresh basil, garlic,mayonaise and oil.

First thing I do is start heating up the oil. You dont want too little, but you dont want too much in your pan, just enough to cover the tomatoes. While the oil is heating I slice my green tomatoes into somewhat thick slices. Then in a small bowl you mix a cup of flour with  pepper, garlic powder and some salt. Pour some milk in another small bowl.

Put your bacon on to fry, and make sure your oil is hot. It should pop at you when you flick water on it. Dredge your tomato slices in milk and then in the flour mixture, then place in the hot grease. You will want to wait until one side is pretty crispy before turning, the crispier the better for this sandwich.

While your tomatoes and bacon are frying away, measure out a cup of mayo and put in blender. Add a clove of garlic and about 4-5 larger fresh basil leaves. Blend the mixture up in your blender until its all smooth. Now you have your mayo.

Check your bacon and tomatoes. Your tomatoes should look like this, or even crispier if you want. Toast your bread. I usually just put mine under the broiler in the oven. Now you can assemble your sandwich.

And here it is in all of its glory. Shut the front door this is a good sandwich. And since we through healthy out the window at the first step, we ate ours with fried zucchini. We did eat some of the fresh berries we picked though, so now I can have dessert!

4th of July 2011

We had a very fun 4th of July weekend, full of the red, white and blue. We started the weekend out with red,white and blue pancakes,which Mister enjoyed just a little.

Hubcap had to work in the morning because apparently the  rice,peaches and walnuts didnt get the memo about the 4th of July festivities. But he came home eventually and we went to a wedding where Little Miss dressed to impress and Mister showed off his moves on the dance floor.

On Sunday we went to my parents and had a bbq (ate really great chicken) and I beat everyone at Dutch Blitz. (thats for you mom) I also made a yummy strawberry pie, so good. And Little Miss helped, of course, so here we are in our 4th of July aprons.

On the 4th we headed up to Grass Valley and spent the day in the pines and watched the fireworks. Little Miss liked them and so did Mister. The quote of the night came from Mister when he said,"uh-oh need a firetruck" after seeing a really big firework. He's just too cute. The only downside was after the show we sat in the parking lot for an entire hour waiting to get out. Needless to say we got home late, but now my downside has an upside..two sleeping babies at 8:00 in the morning.
