This that and everything in between...

I found this picture I took last week today ...I just love it. It is so us! Hubcap was getting ready to take me out for my birthday and this little one and I were goofing around. 
Today we did this! I made a fort for the kiddos, but Mister told me it was a big truck. We took a LONG road trip. He's a bossy driver, there is definitely no back seat driving allowed with him! 

Anyways just thought I would share some yummy recipes from dinner we had/or having this week! First up 
Parmesan Chicken with Garlic Lemon Creme Sauce
This is so GOOD!!! And its super easy, which is of course, always nice. I got this recipe out of a Taste of Home from a year ago and then tweaked it to suit us. Here it is:
You will need : 4 chicken breasts (you flatten them though so I can get away with three and still have leftovers)
3 eggs, beaten
1/4 cup of shredded Parmesan cheese
1 tsp  dried basil
1/2 tsp salt
1/4 tsp pepper
1/2 cup flour
2 tbsp olive oil
 Sauce: 
2 tbsp minced onion
3 cloves garlic, minced
1/4 chicken broth
juice of half a lemon
2 tsp lemon peel grated
1/2 cup heavy whipping cream
3 tbsp butter

First you flatten your chicken. This always makes them way bigger (duh) so I always cut mine into smaller pieces.  
In a bowl combine eggs, cheese and spices. Put your flour in another bowl. Heat your olive oil on the stove in a pan. Then coat chicken with the egg mixture, the flour mixture then put in pan. Brown on both sides and then put into a greased 9x13 pan. Brown remaining chicken.
Bake your chicken, uncovered at 375 for 15-20 minutes. 
When your chicken is in the oven you can make your sauce. To the same pan you cooked your chicken in add your minced onion. Cook until it looks tender then add your garlic, cook for about a minute. Add the chicken broth, lemon juice and grated lemon peel over medium heat until the liquid has reduced by half. Then add your cream, cook until it thickens some. Then stir in butter until it has melted. Serve sauce over chicken.
So good!!! We had ours with mashed garlic red potatoes and asparagus. 
I know that whipping cream can be pricey and shredded Parmesan cheese, so I plan on making Pasta Primavera later in the week, and then pancakes with homeade whipped cream to get the most out of both! :) 


Ok now to the next MOST DELICIOUS stuff ever! Flank steak bruschetta... oh my stars so good.
You will need:
one flank steak
balsamic vinegar
1 loaf french baguette 
tomatoes
basil 
garlic
olive oil
mixed greens
The night before you make this meal, or even the morning of cut your flank steak into thin strips. Put in a bag with 1/2 cup balsamic vinegar, 1/4 cup olive oil, salt, pepper and minced garlic. Let marinade in the fridge over night or all day.
When dinner comes grill your flank steak however you like it..:) 
A few hours before dinner I like to make the bruschetta. Dice up 4-6 tomatoes. Add 4-5 basil leaves that have been sliced into small pieces. Mix into tomatoes. Add 3-4 cloves of minced garlic, olive oil (1-2 tblsp). You can also add salt and pepper if you want, I usually dont. Let this sit in the fridge and marry all those yummy flavors together.
So while your flank steak is cooking, slice up your french baguette into slices/chunks. Brush with olive oil and and broil under high heat until it is to your liking. Take out of oven and then top with your bruschetta. Then you can top each one with a little sprinkling of your mixed greens. I use the 1/2 spring mix 1/2 spinach. Then place 1-2 strips of your flank steak on top. Thats it!!! This is so good, its not even funny! We will be eating ours with grilled artichokes...I can't wait for dinner tomorrow!

Little Miss' 1st Birthday

Little Miss turned one! What a sweet day! She started the day out right with her first donut! This girl loves her sweets...

We had strawberry ice tea, strawberry lemonade, and strawberry punch. For the punch I just used Sprite, strawberry ice cream and sliced strawberries! Pretty and yummy!

So there is Little Miss' 1st Birthday! What a fun day! 

Little Miss is One!

My Sweetest Baby Girl turned one today! It seems like just yesterday that same front door had a It's a Girl sign hanging on it and we were coming home from the hospital, and now here you are standing with your Birthday sign! 
Oh little mam, you are the loveliest little thing! You are sweet and kind, but spunky and silly. You are shy and tentative, but you are friendly and charming. Sometimes I wonder how I got such a sweet, beautiful little person. You have filled our whole family's life with joy Little Miss! Your daddy is wrapped around your finger. He is so "manly", hunting,fishing, football...there has never been anything girly in his life and then came you! I love watching him with you, how you have changed him( in a good way), how you have brought sweetness to his life!
And then there is your brother. My stars, that boy loves you! He waits for you to wake up from your naps by your door, and sometimes he sneaks in and yells, "Addalie's Up!" When he gets in trouble and puts in time out he cries for you and you pad down the hall and stick your little fingers under the door. It makes my heart almost burst to watch the two of you together, the most perfect little love. Some day you will look back at pictures of the two of you, and see your big brothers face and how he is so proud of you, and so glad you are here and you will melt too!  Once again I wonder how I got so lucky that you two never fight you just love, love each other. I pray that you two will always be the very best of friends.
Little Miss the week before you turned one was a tough week in our house, but then here the day came! And it was such a sweet, great reminder of how blessed we are, to have our family and especially to have you! You my dear are a constant reminder of how much God loves us, that he would give you to me and your daddy to love and take care of here on earth. We could never, ever thank Him enough for you! 
I love you little one, and am so thankful for this first year with you and all the memories we have made so far! You have filled our home with joy, sweetness, love and fancy! Happy Birthday!

St. Patricks Day

We had a fun St. Patricks Day! I was so glad that it was on a Saturday this year so that I could go all out and that Hubcap would be here to enjoy it with us! Thanks to all the sunny weather, crops are starting early this year so he did have to work the morning but he made it time in home for most of the madness! 
A sneaky leprechaun snuck into our house and decorated the dining room in rainbows and left Mister this at his place at the table.
Mister thought the rainbows were pretty cool!

Miss Crafty Pants Monday: Little Bit of Life...

Things have been busy around here! We have been soaking up the sunshine!!! We spend most afternoons outside: 

Eating Mud...


and taking our babies on walks...
I also made home made play dough last week and Mister and I had a blast making snakes, cakes and donuts. 


Here is the recipe I used for my play dough:
1/2 cup salt
1/2 cup water
1 cup flour
food coloring
Boil the water. While the water is bowling mix salt and flour. Stir in hot water and add food coloring. When it has cooled a little knead with hands. That's it! I did have to add a little flour because it was a little sticky.


We also painted rocks. Ok, I know mind boggling right? Painted rocks. But in all seriousness this was a hit!! Every day since we painted them, Mister has asked to paint more rocks. They also look pretty cute in our little garden.

We got our tax return back and put it in savings, but we did make one little splurge and bought this bike seat for the kids! Hubcap and I love to bike ride and so this was actually a great investment! And the kids loved it!! 
Finally in our "preschool" Mister and I just did the life cycle of a butterfly. Here is his cutest timeline:



I had him paint different pieces of paper, one all green, one alot of different colors and then I cut them out into the shapes we needed.  
1. For the egg on the leaf he painted a piece of paper green, I cut it and then he glued on a cotton ball for the egg.
2. Got this cutest caterpillar idea off of Pinterest. Mister loves to paint his hands.
3. For the cocoon I cut out the shape from a brown lunch bag and then Mister glued on different lengths of twine. 
4. For the butterfly Mister just painted two pieces of paper and then I cut them out to make a butterfly.
This was a really fun project and Mister loves to walk anyone who will listen through the cycle!! So cute! 
Well it is supposed to rain the rest of the week so we are going to go soak up the sun while we can!! Happy Monday!
