Spring has Sprung!

I am so glad it's feeling like spring!!! We have been celebrating the great weather and living it up   outside.
We went to our first Farmers Market of the season! It was so much fun! We went out to dinner at one of our favorite restaurants before hand and then we enjoyed the market. Mister got to fill up his bag and Little Miss just impressed everyone with her walking and dancing skills.  

We've been eating Strawberry shortcake for breakfast! Yum! 

And drinking yummy drinks! 

Mister caught his first bug in his new bug net from a fun Auntie!! 

And Little Miss is just being plain cute!! 
Mister's new favorite lunch! He loves broccoli dipped in mustard. Weird?!?!?  

On Saturday it was a miracle and Hubcap didnt have to work!! Unheard of in April during planting season! We went out to breakfast at our favorite little breakfast place and then spent the rest of the morning at Home Depot buying flowers and trees! Then we came home, put the babies down for naps and Hubcap and I planted! Here Mister is helping him plant my new Magnolia tree I got for my birthday.

Here are some of my flowers ready to be planted!! I love Spring! 

I am going to share a recipe with you really quick that I made last night for Easter dinner. Grilled Red Potatoes! 
All you need is red potatoes, butter, minced garlic, olive oil and salt and pepper
First bake your red potatoes. I baked about 12 (you will cut them in half later) I baked mine in the microwave in my bake potato bag for about 11 minutes. Then I took them out, cut them in half and put them in a bowl. Once in the bowl, drizzle with olive oil, salt and pepper. Then take them out to your grill. 
Grill them for about 4 minutes or until they are as dark as you like em! Hubcap only grilled ours on the non skin  side...
Once they are done being grilled put them back in the bowl. Toss with about 2-3 tbsp of minced garlic and 1-2 tbsp of butter. Then I sprinkled mine with Parmesan cheese! 
*We grilled about 1/4 of a purple onion as well and then diced it up and added it to the potatoes. It add's a lot of flavor to an already flavorful dish! 
So good and so easy! Perfect spring/summer side dish!

This that and everything in between...

I found this picture I took last week today ...I just love it. It is so us! Hubcap was getting ready to take me out for my birthday and this little one and I were goofing around. 
Today we did this! I made a fort for the kiddos, but Mister told me it was a big truck. We took a LONG road trip. He's a bossy driver, there is definitely no back seat driving allowed with him! 

Anyways just thought I would share some yummy recipes from dinner we had/or having this week! First up 
Parmesan Chicken with Garlic Lemon Creme Sauce
This is so GOOD!!! And its super easy, which is of course, always nice. I got this recipe out of a Taste of Home from a year ago and then tweaked it to suit us. Here it is:
You will need : 4 chicken breasts (you flatten them though so I can get away with three and still have leftovers)
3 eggs, beaten
1/4 cup of shredded Parmesan cheese
1 tsp  dried basil
1/2 tsp salt
1/4 tsp pepper
1/2 cup flour
2 tbsp olive oil
 Sauce: 
2 tbsp minced onion
3 cloves garlic, minced
1/4 chicken broth
juice of half a lemon
2 tsp lemon peel grated
1/2 cup heavy whipping cream
3 tbsp butter

First you flatten your chicken. This always makes them way bigger (duh) so I always cut mine into smaller pieces.  
In a bowl combine eggs, cheese and spices. Put your flour in another bowl. Heat your olive oil on the stove in a pan. Then coat chicken with the egg mixture, the flour mixture then put in pan. Brown on both sides and then put into a greased 9x13 pan. Brown remaining chicken.
Bake your chicken, uncovered at 375 for 15-20 minutes. 
When your chicken is in the oven you can make your sauce. To the same pan you cooked your chicken in add your minced onion. Cook until it looks tender then add your garlic, cook for about a minute. Add the chicken broth, lemon juice and grated lemon peel over medium heat until the liquid has reduced by half. Then add your cream, cook until it thickens some. Then stir in butter until it has melted. Serve sauce over chicken.
So good!!! We had ours with mashed garlic red potatoes and asparagus. 
I know that whipping cream can be pricey and shredded Parmesan cheese, so I plan on making Pasta Primavera later in the week, and then pancakes with homeade whipped cream to get the most out of both! :) 


Ok now to the next MOST DELICIOUS stuff ever! Flank steak bruschetta... oh my stars so good.
You will need:
one flank steak
balsamic vinegar
1 loaf french baguette 
tomatoes
basil 
garlic
olive oil
mixed greens
The night before you make this meal, or even the morning of cut your flank steak into thin strips. Put in a bag with 1/2 cup balsamic vinegar, 1/4 cup olive oil, salt, pepper and minced garlic. Let marinade in the fridge over night or all day.
When dinner comes grill your flank steak however you like it..:) 
A few hours before dinner I like to make the bruschetta. Dice up 4-6 tomatoes. Add 4-5 basil leaves that have been sliced into small pieces. Mix into tomatoes. Add 3-4 cloves of minced garlic, olive oil (1-2 tblsp). You can also add salt and pepper if you want, I usually dont. Let this sit in the fridge and marry all those yummy flavors together.
So while your flank steak is cooking, slice up your french baguette into slices/chunks. Brush with olive oil and and broil under high heat until it is to your liking. Take out of oven and then top with your bruschetta. Then you can top each one with a little sprinkling of your mixed greens. I use the 1/2 spring mix 1/2 spinach. Then place 1-2 strips of your flank steak on top. Thats it!!! This is so good, its not even funny! We will be eating ours with grilled artichokes...I can't wait for dinner tomorrow!

Letter of the Week and Our Fancy Meal...

I probably should work on dividing up my posts since Preschool and Fancy Meals have nothing in common...I'll see what I can do about that..
First things first. Letter of the Week.

I'ts letter "Cc" week. We made a caterpillar today and ate Cars Crackers with Crunchy peanut butter on a Cowboy plate. I know, pretty themed right? I'ts especially amazing since tomorrow is grocery shopping day..


Here's my Little Mister eating his snack and wearing his Cars shirt...I know, I know stop already. 
Let's move on to fancy meals. Most of the time, we do not eat fancy. Mainly because we are not fancy people. Well Little Miss is pretty fancy, but the rest of us, not so much. But every once in awhile I like to make a fancy meal for me and the Hubcap just for fun. This is my copy cat version of BJ'S Balsamic Chicken dish. It's not exactly the same, but its still really good. And with Valentines Day coming up I thought I would share!! 
Balsamic Chicken with Garlic Mashed Potatoes, Asparagus and Crispy Onions

First, you start with your chicken. You will need: 
3-4 chicken breasts, flour, salt and pepper, olive oil, 6 garlic cloves, 4 tblsps balsamic vinegar, 3/4 cup of chicken broth, 1 bay leaf, 1 tbsp butter
First put your oil in a skillet and get it nice and hot.
I usually pound my chicken breasts to make them thinner. (And I usually cut mine to make them smaller leaving me with 6-8 smaller pieces of chicken, but you dont have to. )
Salt and pepper your flour. Dont be shy with the salt and pepper... it will kill the chicken if you dont have enough. 
Dredge your chicken in the flour and then add the oil. Cook for about 3 minutes over  or until this side is nice and brown over medium high heat.
Turn chicken and cook the same for the other side. Also add the garlic cloves.
When both sides are nice and brown add the chicken broth, balsamic vinegar, and bay leaf. 
Cover and cook for 10 minutes, turning the pieces occasionally.
Once they have cooked through, remove the chicken and put on separate plate. Cover..I usually put mine in the oven. 
Now just add the butter to your sauce and let cook for about 5 minutes. Remove from heat and discard the bay leaf. Cover until the rest of your meal is ready.

Now for the mashed potatoes. I usually have the potatoes peeled and chopped before I start the chicken, and start the water for the potatoes when I start the oil for the chicken, The potatoes cook about the same as the chicken. 
When its time to mash them I add milk, cream cheese, sour cream, butter, salt and pepper and 1-3 cloves of minced garlic. I add a little of each at a time to make it the right consistency.  I am sorry if I just overwhelmed you with fat content...
Start cooking your asparagus, now... :) I put mine in a steamer bag and cook it in the microwave. If your going to steam in on the stove, start this earlier.
Now on to the onions...
I heat about 1-2 tblsp of olive oil on the stove. 
Then cut up your onion into rings and then in half. The thinner the better. I dredge them in a flour mixture same as the chicken. (But not the same that you dredged the chicken in..thats kind of gross)
Once the oil is hot you add your onions, and watch them like a hawk...they cook fast!
Now its time to assemble...
Pick a pretty plate... (very important) 
Put a nice mound of potatoes to the middle of your plate.
Add a chicken breast and pour about 1 tblsp of sauce over. 
Top with asparagus. I usually do four pieces, two crisscrossing another two. 
I then add some mixed greens. Its pretty and makes you feel better about the mashed potatoes.
Top the greens with your crispy onions.
Eat!!
This is one of my favorite meals.Its so yummy, and really not too hard, just alot of steps.

Current Favorites and Muffin Madness

Good morning friends! We've had a busy morning already over here and it's not even 10:00! Oh the things you can do when your child loves to wake up bright and early! Now Oodles is down for her morning nap and Mister is watching his episode of Sesame Street so I thought I would share with you some things I am loving.
                                             

1.I am loving that this little girl learned to clap. She now claps almost all day, but at the most appropriate times. Daddy's home, she claps, Mister helped, she claps, Mommy spilled paint, she claps, seriously this girl is smart! She also has her fake little laugh down pat, so now any time any one opens their mouth to speak she busts up laughing. And claps of course. 



2. Yes, I am loving apples, oranges and cinnamon. If you peel the orange and cut the apple up into rounds, put them on a cookie sheet and sprinkle them with cinnamon, put it in your oven at 250 it makes your house smell   AMAZING! It last a long time too, you can use the same pan five or six times before they get a little too crispy! Try it, you'll love it!


3. Twisted Peppermint lotion from Bath and Body Works. I got this last year as a present from one of my kindergartners. Yummy! I like to put it on the babies when they are done with their baths. It makes them smell sweet and Christmasy.... 

4. Our first Fancy Nancy book! I have been dying to get Little Miss a Fancy Nancy book and I finally broke down and bought her one last night. I always get Mister a new Christmas book each year so last night at the store he got to choose one, and I chose this one for Little Miss. This book is so cute!! Can't wait to buy Little Miss some more! 


5. Little Miss's stocking. I bought a plain white stocking at WalMart and then added some doodads and voila! Its so cute, and she loves it. She clapped when I was done....


6. And lastly I am loving these muffins! Cappachino Chip and Lemon Berry Cream to be exact. Here are the recipes.

Cappachino Chip
These muffins will change your life...(or your pant size) Seriously these are so good! I found the recipe : here. Yum, yum and more yum.

And now for the Lemon Berry Cream Muffins. These are kind of summery, but last night they had a sale on raspberries so I had to make them. These are the muffins I have made for my doctor and their assistant right before I have had my babies.  I want to offer them something yummy so that they are super nice to me while giving birth, or the second time chopping me open, but I also dont want them to think I just sit around and eat baked goods all day, henceforth that is why I am HUGE! So I make them these "healthy" muffins. Healthy because they have two healthy ingredients, lemon and berries.... So far it has worked, they have been very nice about chopping me open and have not made one comment about me being huge...

2 cups flour
1 cup sugar
1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/2 tsp cinnamon
1 1/2 cups fresh or frozen raspberries or blueberries (if frozen do not thaw out)
2 eggs, lightly beaten
1 cup of lemon yogurt (I use two of the 6 oz Yoplait yogurts)
1-2 tsp of grated lemon zest
1/2 vegetable oil
1/2 teaspoon vanilla extract

In a bowl combine the first six ingredients. Carefully fold in the berries.
In another bowl combine the next five ingredients.
Fold the wet ingredients into the dry.
Fill greased muffin tins about 2/3rds full.
If you are not making the streusal topping now you can Bake for 18-22 minutes at 400. (My oven tends to run hot, so I bake mine for 15 minutes and they are perfect)
Let sit for five minutes before removing!

Streusel Topping:
Today I did not make a streusel topping because I'm going to freeze these but usually I do. To do this you combine:
3 tblsps flour
3 tblsps quick cooking oats
1 tbsp white sugar
1tbsp brown sugar
1/8 tsp cinnamon
Cut in 2 tblsp of cold butter until crumbly. Sprinke over muffins before baking. Follow the instructions above for the baking/cooling.

Crockpot Wednesday: A Spooky Meal

I thought I would share with your our family's traditional Halloween meal today. I figured if I shared it with you today, you could make it if you want on Monday for Halloween! We eat this meal every year, and it is alot of fun! It is also very simple which is great for such a busy day! So here it is The Burns Family Spooky Meal:

Ghostly Shepards Pie

Here's what you will need :

1 pound lean ground beef, Worcheshire sauce, milk, frozen veggies, 1 can cream of mushroom soup, cheddar cheese and 7-8 potatoes

1. Put on a large pot of water to boil for your potatoes. Wash and peel your potatoes, cut up into quarters add to water. Cook until you can pierce easily with a fork.
2. Preheat your oven 350. On your stove over medium high heat cook your ground beef. While cooking your ground beef warm half a bag of frozen veggies in the microwave.
3. Drain your meat and then put back in pan. Add your can of cream of mushroom, 1/4 cup of milk, a dash of Worcheshire sauce and if you would like you can season with salt and pepper.
4. Drain your veggies (at this time take out 6 peas from the mix and set aside) and then add to your meat mixture. Take off heat.
5. Your potatoes should be done now, drain and then mash. I usually add about 1/4-1/2 cup of milk, a half a block of cream cheese and a half a stick of butter and usually a few dollups of sour cream and salt and pepper to taste. Usually I add a little of each ingredient at a time, its never really the same.
6. Set aside 1- 1 1/2 cups of mashed potatoes.
7. Pour your meat mixture into a 9x13 pan. Top with the remaining mashed potatoes and spread evenly over the meat mixture. Put into oven and bake for 10 minutes.
8. Grate 1-2 cups of Cheddar Cheese.
9. After 10 minutes take Shepards Pie out of  the oven and sprinkle with cheese. Put back into oven until cheese has melted about 5 minutes.
10. Once your "Pie" is done take your remaining mashed potatoes and divide into two mounds on top of your casserole. These are your ghosts. Take your reserved peas and add three to each mound, two eyes and once mouth.

Bony Bone Breadsticks

You will need:

Yep thats it. A can of  garlic breadsticks.
All you need to do to turn these into "bones" is to tie knots at the end of each breadstick. Then bake according to the can.

Orange-O-Lanterns

You will need:

1 orange for each person eating, kiwis, strawberries and whole cloves.

1. Cut the top off of oranges. With a spoon scoop out all of the orange "pulp" until you have a nice hollow little bowl.
2. With your cloves make a face on your jack-o-lantern.
3. Dice up your strawberries and kiwis and leftover orange and mix together for your fruit salad.
4. Spoon into your jack-o-lanterns.
These are great because you can make them in the morning and they are all ready for dinner!

So there you have it, one super easy, yet fun spooky meal!

Pumpkin Life Cycle craft and My Top 5 Pumpkin Recipes


Happy Monday! Glad its the start of the new week. It will be a crazy week in our house; I have parent teacher conferences, board meetings and Parents Night Out this week at work. Ha-and I only work part time. :)
Because of our crazy week I am going to combine Miss Crafty Pants Monday and Crockpot Wednesday together.
Last Monday was rainy so the kids and I painted. Even Little Miss got to join in on the fun! Here's what you will need for the Pumpkin Life cycle craft:
One brown bag, green yarn, green, yellow and orange paint, one cup or plate for paint, paintbrushes
I had all of these materials laying around the house, use what you have. I always make sure I have brown bags at the house just for crafts. They are free- most paper is not! :)
First I read the kiddos the book Pumpkin Circle.
This book is great, and has alot of really fun pictures! Obviously it is over a six month old and two year old's head but they liked the pictures.
I cut out three sizes of pumpkins for each kid and then they got to paint.
Smallest pumpkin=green
Middle Pumpkin= yellow
Biggest Pumpkin= orange
We let them dry and then I taped little stems to the top out of the paper bag. I then punched holes in the top and strung my green yarn through the holes, to make a pumpkin garland! And here they are:
Arent they cute? Mister was proud, it was the first thing he showed Hubs when he got home from work. I used to do this craft when I taught Kindergarten and then the kids would write a fact down on their pumpkin for that part of the cycle. There are many variations you can take on this!
Ok, now on to the really good stuff, eating! I always tell my students that eating is my hobby that I am really good at! :)
I am going to share with you my Five Favorite Pumpkin Recipes. We eat alot of Pumpkin baked good around here during the fall! I love pumpkin, its just so happy!
5. Pumpkin Pie Oatmeal
I am not really a huge fan of oatmeal, in fact I can't really eat it at all. But Mister and Hubs love it, so this recipe is a great variation on your everyday oatmeal. You will find the recipe here.
4. Chocolate Chip Pumpkin Muffins
  Ok, we may or may not have these on constant supply at our house from September to December. Once in awhile I may shake things up and make a loaf of Chocolate Chip Pumpkin bread, but usually we eat these. I LOVE them! Recipe here.
3. Pumpkin Fluff Dip
This is a really fun dessert, and it's super easy! Mister LOVES "dip", so this is the perfect dessert for him. If you can open a can and know how to stir this is the recipe for you! Pumpkin Fluff!!!
2. Pumpkin Pancakes
Every Halloween we eat the same meals for Breakfast and Dinner. Its just tradition to eat these pancakes on Halloween morning. There are alot of ingredients, but these are just plain good! I serve ours with Honey Butter and syrup. Recipe here.
1. Pumpkin Brownies
These are too good to be true! So yummy, so easy, so perfect! These are just great! We could probably eat a whole pan in one sitting, but we dont, I promise...... Recipe here
So there you have it, our family favorites! Most of them are sweet, because I like sweets and we do eat alot of other veggies, were just not big Gourd people. :)

Family Rules and Crockpot Apple Cider

Its a miracle! Mister woke up at his usual 5:45 time, but was promptly returned for a time out and fell back asleep! So here I sit with my coffee and pumpkin muffin enjoying the quiet. Perfect, cause were headed to the Pumpkin Farm for the 5th time, (its just too close to resist, and it doesnt have to cost anything at all) and so now we wont be grumpy.
I found on Pinterest this last week the cutest sign of Family Rules. I loved the rules, they are exactly what Michael and I want for ourselves and what we want to teach to our children. I knew I wanted to display these rules somehow. Heres what I came up with:
I took an old frame, took out the glass and then covered the back in some old fabric. (It was actually just an old shirt that tore). I then scrapbooked the Family Rules part, and strung three strands of twine across. I wrote the rules on scrapbook tags and tied them to the strands of twine and then returned the whole thing to the frame. Thats it. It probably took 15 minutes, the perfect naptime craft. But most important here are Our Family Rules:
1. Pray often (always)
2.Consider it pure joy...when you face trials." James 1:2
3. Find your identity in Christ
4. Show the same grace to others that God has shown to you.
5. Encourage others. Love others.
6. Laugh and laugh hard.
7. Be kind. Listen. No yelling.
8. Be the first to say I'm sorry.
9. "Act justly, love mercy, walk humbly with your God." Micah 6:8
10. Be thankful.
11. Hug one another (daily)
12. Always be looking for ways to serve others.
Not too hard of concepts, but sometimes in the daily life hard to live out. I love that we now have a reminder in our hallway to encourage us to "make good choices" (as I always say to Mister)

On to Apple Cider. This is my moms recipe, I have to give credit where credit is due. I dont have pictures, sorry, but its not that hard of a concept. :) Heres what you need:
1-2 bottles of Apple Juice, cinnamon, 1 orange, whole cloves
Into your crockpot pour your apple juice and add about 11/2 teaspoons of cinnamon. If you want you can add 1-2 cinnamon sticks instead.
Then take your orange and you are going to stick the whole cloves into the orange, all over. You can make cute lines, or just dot it, whatever suits your fancy.
Place the orange in the juice, put your lid on and turn to Low for about 3 hrs. It doesnt take that long to warm up.
This recipe is so good and it makes your house smell so good!!!

Crockpot Wednesday:No Fuss Chicken

Happy Wednesday! Arent you glad it's the middle of the week? Me too! I'm just so excited for fall to be here that I just want to get through this hot weather so we can have some fall fun! I already started decorating for fall, much to Hubcaps shagrin. But its fall at Starbucks and its September which to me gives me full liberty to start! Since I started decorating for fall which drove Hubcap crazy I decided to make his favorite food this week. I wish I could say that his favorite meal is one that only I can make "just right". This is not the case. In fact, our two year old could make this for him, thats how easy this is! I will give him this, it is GOOD. So heres the recipe for No Fuss Chicken.
Here's what you need:
1 can of cream of mushroom, 1 can of cream of chicken, 1/2 cup of sour cream, 3-4 chicken breasts.


In a bowl mix together your two cans of soup. I always add a little bit of pepper as well. Place chicken breasts into your crockpot and pour soup over chicken. Cook on High for 3-4 hrs or Low for 5-6. My crockpot tends to cook hot so I cook mine on Low for 4 hrs and its perfect... About a half hour before eating shred the chicken and stir in your half cup of sour cream. Thats it! Mister could make it right? We eat ours over mashed potatoes and its really yummy!
Heres a note: This is not a "pretty" dish. It's really bland looking, but I promise its full of flavor. You could sprinkle some parsley on it maybe to brighten it up?!?!?
And just for kicks and giggles here is a picture of my Little Miss eating carrots for the first time. She loved them, as you can tell.

Crockpot Wednesday: Salsa Ranch Chicken Wraps and Chicken Tettrizini

So for today I have two recipes to share with you! Neither of them our crockpot recipes, but both are easy and will make dinner time alot easier! I really hate coming home late from work and then having to make dinner and then clean up! So when I meal plan I try to pick simpler meals for work nights and then meals that take more prep/time on non work nights!

The first recipe is Salsa Ranch Chicken wraps. Here's what you need:

butter, 1 grilled/baked chicken breast per wrap, 1 cucumber, 1 bell pepper, sundried tomato and basil spinach tortilla wraps, mozzarella cheese, salsa and ranch dressing.
First you need to either bake or grill your chicken. (I like our's grilled so usually at the beginning of the week we do our grilling and if I know we will need some type of cooked chicken later in the week I have Hubcap grill some extra! ) Cut the chicken into strips. Next, cut your bell peppers into strips and slice up your cucumber.

Now its time to assemble. Lay out one tortilla and spread out a tblsp of ranch dressing and a tblsp on salsa. I actually in most any other case think that ranch dressing is kind of gross, but in this instance its really good! :) Place a few strips of chicken, bell pepper and a few slices of cucumber. Sprinkle on your mozzarella cheese. Then wrap it all up! It should look like a small fat burrito!



In a frying pan add a tbsp of butter and melt in pan. When its hot, you can add your wraps. Let it get a nice golden brown color, before switching to the other side! And thats it your done! These are really, really good and really, really easy!
The next recipe I have I do not have pictures for because of my camera. But I do have the best dad in the world who on his birthday gave me a nice, fancy shmancy camera! So I can be picture happy once again.

This recipe is chicken tetrizzini. There are a few steps, but its simple and it makes two dishes! So you can bake one and freeze the other to bake later.
Heres what you need:
One pound of spaghetti (broke into thirds), 2 10 oz cans of cream of mushroom soup, 1 10 oz can of cream of chicken soup, 15 oz grated cheese, 6 cups of cooked, shredded chicken, 1 bag of cooked, frozen peas, 2 cups of chicken broth.
First you need to cook your spaghetti in salted boiling water. In another pot cook soups over Low heat and when heated through add your chicken, 12 oz of cheese, and your peas. Then add your cooked spaghetti. Add 2 cups of chicken broth at the very end. Then pour into 2 9x13 pans and sprinkle remaining cheese on top. If you are baking bake at 350 for 25-30 minutes.
This dish is pretty tasty too, it's good old comfort food. And the best part is there's two! Last year when I was pregnant with Little Miss and working full time I dropped by my friend Heidi's house after work one day to visit. When I was leaving she told me to wait one second and then came back with two different frozen dishes and sent me home with them! It was probably the highlight of my week and was so generous of her! We dont get many drop in visitors in our neck of the woods but if you do that extra casserole could make someone's day! This meal would be great as well to take to someone who just had a baby, or at our church just got out of the hospital! :)
